Mei Leaf Tasting Notes

EYES - DRY LEAF: Two tone tea with lime green flecks amongst dark blue green rolled leaves.
NOSE - DRY LEAF: Warm milk, hard toffee and hot summer meadows.
NOSE - WET LEAF: Lily flowers, drying grass and vanilla yoghurt drink.
EYES - LIQUOR: Bright fluorescent lime green liquor.
MOUTH - TEXTURE: Thin to medium, clean and refreshing.
MOUTH - TASTE: Milk, green papaya and hoppy bitters with a lingering orange boiled sweets aroma.
NOSE - EMPTY CUP: Vanilla, clay and sweet cream.
MOUTH - FINISH: Rich in Guan Yin Yun to give a puckering sensation which relaxes to sweet juiciness.
EYES - WET LEAF: Shades of fern green small to medium leaves with torn edges.
BODY SENSATION: Gently uplifting.

It is unusual to find a totally unroasted traditional (Chuan Tong) style oolong and we were determined to find a traditionally oxidised tea that was high enough quality to be drunk naked - without any roasting to cover over any inadequacies.

This tea gives any Tie Guan Yin explorer a chance to taste the Chuan Tong style without any adornments and maybe compare with the modern style.

This Chuan Tong oolong has more depth in the taste and the finish. Yes it has slightly less of the sweet flowers compared with the modern style but the feeling in the mouth has more potency and richness.

This comes from Xiping village which is the birthplace of Tie Guan Yin and famous for producing the best Chuan Tong (traditional) Tie Guan Yin (Iron Goddess) tea out there.

Nong Xiang Xiping Huang Dan

Tie Guan Yin style Oolong made from the Huang Dan cultivar and roasted for 9 hours over Longan wood charcoal. Vanilla fudge, baked panna cotta and oxidised pear.

Sip Spring

Xiping Xiao Qing Tie Guan Yin

Hand shaken, top drawer Tie Guan Yin given an extra day before firing. Spring mountain air with fresh grass, Carnations and Jasmine. A touch of cream leading to some starfruit sourness.

Sour Sap

Xiping Huang Guan Yin

Refreshing and bright Tie Guan Yin made with a hybrid cultivar. Torn fresh green leaves, orchid, melon and lemon balm. Quenching dry with a sour candy puckering leading to soft, sweet juiciness.
