How Much Tea Leaf for Perfect Brewing?

I have already written a post about the importance of the leaf to water ratio when brewing. I equate this brewing parameter to the richness of the resulting tea and it is the key difference between Gong Fu and Western styles of brewing.

So how much is the right amount of leaves?

This video gives a starting guideline for everyone out there getting into Gong Fu brewingEventually you will reach a point where you can work out quantities by eye but before then I recommend that you use a digital scale. As with everything in tea, I cannot give you rules which apply to all teas and I wouldn't really want to - you as a brewer should be experimenting to find your own preferences and play your essential part in producing tea. This is your jumping off point to explore and play and before you know it you will be pouring the most delicious brews.

Please note: after a little more testing we found that ball rolled Oolongs are generally more suited to about 6-6.5g per 100ml.

Here is the basic guide for everyone:

GREEN & YELLOW - 3-3.5g per 100ml

WHITE - 3.5-4g per 100ml

BLACK - 4-4.5g per 100ml

OOLONG - 4.5-5g per 100ml

BALL OOLONG - 6-6.5g per 100ml

PUERH - 5g per 100ml
