EYES - DRY LEAF: Spinach and cannabis green rolled leaves.
NOSE - DRY LEAF: Malted milk and lotus flowers.
NOSE - WET LEAF: Sweet egg yolk, buttered spinach and gardenia.
EYES - LIQUOR: Fluorescent, jewel like light chartreuse.
MOUTH - TEXTURE: Soft, velvety and medium texture.
MOUTH - TASTE: Sweet custard, dessicated coconut and gardenias with a buttery persistance.
NOSE - EMPTY CUP: Heady mix of sweet egg custard and gardenia flowers.
MOUTH - FINISH: Clean with a slightly dry finish.
EYES - WET LEAF: Tender and thick, dark olive green leaves.
BODY SENSATION: Gently warming and slightly relaxing.

This is a very limited edition, modern style and Hand Shaken Tie Guan Yin.

Purchased in tiny quantities on our tea trip to Xiping in Fujian. This is a top drawer modern style, Qing Xiang Tie Guan Yin. This tea has been hand shaken which means that instead of using bamboo rollers during the shaking phase of production, this small batch has been tossed by hands. This process is reserved for the very best harvests of the year.

It was found at the Tie Guan Yin museum in Anxi county where all the tea from across all of the mountainous area is sent for tasting. After spending three days in Anxi searching for a special Qing Xiang Tie Guan Yin, this was the prize tea which we found an hour before leaving the area. Good fortune comes to those who wait I guess!

Golden Yolk has been made in the Xiao Zheng way. This means that the tea was fired probably the day after picking. It is one of the most custardy and yolky Tie Guan Yin Oolongs that we have ever tasted and we have tasted about hundred this year!

Tie Guan Yin style Oolong made from the Huang Dan cultivar and roasted for 9 hours over Longan wood charcoal. Vanilla fudge, baked panna cotta and oxidised pear.

Hand shaken, top drawer Tie Guan Yin given an extra day before firing. Spring mountain air with fresh grass, Carnations and Jasmine. A touch of cream leading to some starfruit sourness.

Sour Sap

Xiping Huang Guan Yin

Refreshing and bright Tie Guan Yin made with a hybrid cultivar. Torn fresh green leaves, orchid, melon and lemon balm. Quenching dry with a sour candy puckering leading to soft, sweet juiciness.
