Cloud and Mist Green aka Yun Wu is a bit of an ugly duckling. The look of the dry leaves gives the impression of a standard average quality Green tea - one for everyday drinking.
But this batch of Yun Wu is the perfect example of not judging a book by its cover. Drop a handful into a hot gaiwan and the aroma coming off those dry leaves is something all together more intoxicating than some dusty, low grade green. Out comes artichokes and noisette butter.
The moment that hot water hits these leaves they transform into gorgeous, lime green, delicate and youthful pickings. The aroma and taste is complex with balanced notes from vegetal, to zesty to creamy to savoury to sweet - a real eye opener of a Green!
I recommend really short steepings to allow this tea to shine - it is one of those brews that really changes according to small parameters. Keep it fast and explore the variations of taste through all of the infusions.
